A few years ago, as an experiment, we planted 2 rows of Gamay, 2 rows of Tempranillo, and 2 rows of Dolcetto. We wanted to know if we could make a red wine that wasn’t Pinot Noir. The Tempranillo gave us the best yields, the Gamay gave us the best fruit flavor, and the Dolcetto gave us enough acidity to bring everything together, with the ultimate goal being a wine that is greater than the sum of its parts.
