A wine unlike any other, floral and citrus hops practically jump out of the glass. On the palate the tropical fruit flavors of our estate grown Chardonnay make their mark and the herbal hop flavors reappear on the finish, with a hint of estate sourced Oregon oak adding depth and complexity.

  • Inspired by Brian, our farm and vineyard manager, the goal of this wine was to use all of our resources and create something that was a reflection of our entire farm, not just the vineyard and winery. We started with two rows of estate grown chardonnay, and fermented them barrels crafted from the farm’s fallen oak trees. We left a touch of residual sugar in the wine to balance the hops, then dry-hopped 4 lbs of estate grown hops in 120-gallons of wine for roughly 24 hours, enough to give it aroma and flavor without adding bitterness. We finished with sterile filtration, to make a wine that is polished and clean while still being kooky and weird.
